Turkish Dessert with Yogurt, Honey and Fresh Fruit Recipe

This dessert is a simple yet very pleasant way to finish a meal: thick yogurt, honey and fresh fruit layered in a glass. In Turkey, combinations like this are common in summer, when no one feels like standing by a hot oven. The taste is a bit similar to the Greek yogurt and honey dessert, but you can choose the fruit toppings based on whatever you have in the fridge.

This dessert combines the simplicity of everyday ingredients with the sunny flavors of Turkish summer. Thick yogurt, fragrant honey and juicy fruit create a refreshing, light treat that requires no baking and can be adapted to whatever fruit you have on hand.

Chef's tips

Use the thickest yogurt you can find so the layers stay distinct and don’t run together. Taste the yogurt and honey mixture before layering and adjust the sweetness to your liking—different honeys vary in intensity. Lightly toast the nuts in a dry pan beforehand if you want to boost their aroma and crunch.

How to serve

Serve well-chilled on hot days, ideally in tall glasses to show off the colorful layers. You can top each portion with an extra slice of fruit or a small mint leaf for a fresh look. It pairs nicely with unsweetened black tea or Turkish coffee to balance the sweetness.

Ingredients

  • Greek yogurt or thick plain yogurt - 500 g
  • honey (or more to taste) - 4 tablespoons
  • strawberries or other soft fruit (chopped) - 200 g
  • seedless grapes (halved) - 100 g
  • apricots or peaches (diced) - 2 pieces
  • walnuts (roughly chopped) - 40 g
  • unsalted pistachios (chopped) - 20 g
  • ground cinnamon (optional) - 0.25 teaspoons
  • lemon zest (grated, yellow part only) - 0.5 teaspoons
Main Ingredient: yogurt

Preparation

  1. Wash the fruit and dry thoroughly. Slice or quarter the strawberries, cut the grapes in half, and dice the apricots or peaches into small cubes.
  2. Roughly chop the walnuts and pistachios with a knife.
  3. Transfer the yogurt to a bowl, add the grated lemon zest and half of the honey. Gently mix until the honey dissolves, but do not beat too much so the yogurt stays thick.
  4. Prepare 4 glasses or dessert cups. Put 2 tablespoons of yogurt in the bottom of each, then add a layer of fruit and sprinkle with a little of the nuts.
  5. Repeat the layers until you use up the ingredients, finishing with a layer of yogurt on top.
  6. Drizzle a teaspoon of honey over each dessert, sprinkle with the remaining nuts and, if you like, a pinch of cinnamon.
  7. Serve immediately or chill in the fridge for 30 minutes if you prefer a very cold dessert.

Storage

In fridge: 1 days
Freezing: No

Deser najlepiej zjeść tego samego dnia, bo owoce puszczają sok; przechowuj przykryty folią spożywczą, aby jogurt nie chłonął zapachów z lodówki.
