Ingredients

  • plain yogurt - 400 g
  • banana - 3 pieces
  • honey - 3 tablespoons
  • butter - 20 g
  • walnuts - 30 g
  • cinnamon - 0.5 teaspoons
  • vanilla - 0.5 teaspoons
  • lemon zest - 0.5 teaspoons

Preparation

  1. Roughly chop the walnuts. In a bowl, mix the yogurt with half of the honey, the vanilla extract and the grated lemon zest.
  2. Peel the bananas and cut them into thick slices or lengthwise into halves.
  3. Heat the butter in a pan over medium heat. Add the bananas and fry for 2–3 minutes on one side, until lightly browned.
  4. Turn the bananas over, sprinkle with cinnamon and drizzle with the remaining honey. Fry for another 2–3 minutes, gently shaking the pan, until the honey starts to foam and the bananas are coated in a thick, glossy sauce.
  5. Remove the pan from the heat and set the bananas aside for 2–3 minutes to cool slightly – the sauce will thicken.
  6. Spoon portions of yogurt into glasses or small bowls, top with the warm caramelized bananas and the sauce from the pan. Sprinkle with chopped walnuts and serve immediately.
