Ingredients

  • Greek yogurt thick - 400 g
  • oranges large, juicy - 2 piece
  • honey - 3 tablespoons
  • flaked almonds - 40 g
  • orange zest finely grated, only the orange part - 1 teaspoon
  • ground cinnamon optional - 0.25 teaspoons
  • vanilla extract or paste, optional - 0.5 teaspoons

Preparation

  1. Tip the almonds into a dry frying pan and toast over medium heat for 3–5 minutes, shaking the pan often, until they are lightly golden and smell nutty. Remove from the heat and set aside to cool.
  2. Wash the oranges thoroughly in warm water. Finely grate the zest from one of them (only the orange part), then peel both oranges, removing the thick peel and white pith. Cut the flesh into cubes or segments, catching any juice that runs out.
  3. In a bowl, mix the yogurt with 2 tablespoons of honey, the orange zest and the vanilla (if using). Taste and add a little more honey if needed.
  4. Add the remaining 1 tablespoon of honey to the orange pieces and gently toss so the fruit is lightly coated.
  5. Spoon a layer of yogurt into glasses or small bowls, top with some of the oranges and their juice, then sprinkle with the toasted almonds and a pinch of cinnamon, if you like. Serve straight away or after a short chill in the fridge.
