Spanish Baked Peach Dessert with Honey and Almonds Recipe
Baked peaches with honey and almonds are a simple dessert inspired by the Spanish love of fruit served with nuts and olive oil. The fruit becomes soft and very aromatic, while the honey and almonds form a lightly caramelized crust on top. It’s a great finale to a summer lunch or dinner on the terrace when you don’t want to spend much time at the oven.
This dessert combines the natural sweetness of ripe peaches with the richness of honey, butter, and almonds, echoing Spanish flavors where fruit, nuts, and olive oil often meet in simple but memorable dishes. It requires very little active time yet feels elegant and restaurant-worthy.
Chef's tips
Choose peaches that are fragrant and ripe but still firm enough to hold their shape while baking. If your honey has a very strong flavor, you can mix it with a milder one to keep the peaches from being overpowered. Keep an eye on the almonds in the last minutes of baking so they brown without burning.
How to serve
Serve the peaches warm with yogurt or ice cream and a little of the baking juices. For a more Spanish-style touch, drizzle a drop of good extra virgin olive oil over the yogurt and finish with a tiny pinch of flaky salt. They’re also delicious served over simple sponge cake or with crunchy biscotti on the side.
Ingredients
- peaches ripe but firm - 4 pieces
- honey - 3 tablespoons
- flaked almonds - 30 g
- butter cut into small pieces - 20 g
- ground cinnamon - 0.5 teaspoons
- lemon juice - 1 tablespoon
- thick plain yogurt for serving, optional - 200 g
- olive oil a few drops for the yogurt, optional - 1 teaspoon
Preparation
- Preheat the oven to 190°C (top and bottom heat). Wash the peaches, cut them in half and remove the stones.
- Arrange the peach halves cut side up in an ovenproof dish. Drizzle them with lemon juice.
- Gently warm the honey if it is very thick so it spreads more easily. Brush each peach half with honey, dividing it evenly.
- Place a small piece of butter on top of each half. Sprinkle the fruit with cinnamon and flaked almonds.
- Put the dish into the preheated oven and bake for 18–20 minutes, until the peaches soften, release their juices, and the honey with butter and almonds is lightly browned.
- In the meantime, if using yogurt, mix it with a few drops of olive oil to make it creamier.
- Serve the peaches warm, 2 halves per portion, with a spoonful of yogurt on the side or on top. Spoon over a little of the sauce that has collected in the dish.
