Be sure to marinate the chicken in buttermilk for at least 30 minutes, and if you have time – overnight; this will make the meat exceptionally juicy and tender. When coating, press the flour firmly onto the pieces, you can even gently “knead” them with your fingers – this creates a rougher, crunchier crust. Fry in batches and don’t overheat the oil: if the chicken darkens quickly while still pink inside, lower the heat and give it time to cook through gently.

How to serve

This dish works best for a weekend brunch or a late post-party breakfast when everyone is craving something substantial and filling. Serve it with extra slices of butter on the hot waffles, a bowl of maple syrup for drizzling, and, for example, fresh strawberries or pieces of mango to cut through the richness. Ingredients

  • chicken fillet - 600 g
  • buttermilk - 300 ml
  • garlic - 2 cloves
  • paprika - 1 teaspoon
  • wheat flour - 200 g
  • salt - 1.5 teaspoons
  • black pepper - 0.5 teaspoons
  • vegetable oil - 500 ml
  • waffles - 8 pieces
  • maple syrup - 6 tablespoons

Preparation

  1. Cut the chicken into strips or smaller cutlets about 1.5 cm thick so it fries evenly.
  2. Peel the garlic and press it through a garlic press. In a bowl, mix the buttermilk, garlic, 0.5 teaspoon of salt, paprika, and pepper.
  3. Place the chicken pieces in the buttermilk so they are completely submerged. Cover and refrigerate for at least 30 minutes (you can also leave them overnight).
  4. In a second bowl, add the flour and 1 teaspoon of salt and mix. Remove the chicken from the buttermilk, shake off the excess, and coat thoroughly in the flour, pressing it onto the meat.
  5. Heat the oil in a deep frying pan or pot to about 170–180°C. If you don’t have a thermometer, drop in a small piece of bread – it should brown in 40–50 seconds.
  6. Fry the chicken in batches so the pieces don’t touch each other. Fry each batch for about 5–7 minutes, turning occasionally, until the coating is golden and the meat inside is white and juicy.
  7. Transfer the fried pieces to a plate lined with paper towels to drain off excess oil.
  8. Prepare the waffles according to your recipe or reheat ready-made ones in a toaster until hot and lightly crisp.
  9. Place a few pieces of chicken on each waffle, drizzle with maple syrup, and serve immediately while everything is still hot.
