İncir uyutması – Turkish dessert with dried figs and milk Recipe
İncir uyutması is a simple yet surprising dessert made from dried figs and milk that thickens naturally without any added gelatin. In Turkey it’s treated as a light homemade sweet, often prepared in the evening so it can “sleep” in the fridge until the next day. The flavor is reminiscent of a delicate milk pudding with a pronounced, honey-like fig aroma.

Ingredients
- dried figs - 200 g
- milk - 800 ml
- honey - 1 tablespoon
- cinnamon - 0.5 teaspoons
- walnuts chopped - 2 tablespoons

Preparation
- Rinse the dried figs thoroughly under running water, pat them dry, and cut off the tough stems. Dice them finely.
- Heat the milk in a saucepan to about 40–45°C – it should be clearly warm but not hot, so it doesn’t burn your finger. Remove from the heat.
- Add the honey and cinnamon to the warm milk and stir well until the honey dissolves.
- Add the chopped figs to the milk and stir. Set aside for 10 minutes so the figs soften slightly.
- Blend everything with an immersion blender until smooth, or leave some fig pieces if you like noticeable fruit in the dessert.
- Pour the mixture into small glasses or bowls. Cover and refrigerate for at least 4 hours, preferably overnight – the dessert will thicken and become creamy.
- Before serving, sprinkle the top with chopped walnuts and, optionally, a little extra cinnamon.
