Spanish Baked Peach Dessert with Honey and Almonds Recipe

  • peaches ripe but firm - 4 pieces
  • honey - 3 tablespoons
  • flaked almonds - 30 g
  • butter cut into small pieces - 20 g
  • ground cinnamon - 0.5 teaspoons
  • lemon juice - 1 tablespoon
  • thick plain yogurt for serving, optional - 200 g
  • olive oil a few drops for the yogurt, optional - 1 teaspoon

Preparation

  1. Preheat the oven to 190°C (top and bottom heat). Wash the peaches, cut them in half and remove the stones.
  2. Arrange the peach halves cut side up in an ovenproof dish. Drizzle them with lemon juice.
  3. Gently warm the honey if it is very thick so it spreads more easily. Brush each peach half with honey, dividing it evenly.
  4. Place a small piece of butter on top of each half. Sprinkle the fruit with cinnamon and flaked almonds.
  5. Put the dish into the preheated oven and bake for 18–20 minutes, until the peaches soften, release their juices, and the honey with butter and almonds is lightly browned.
  6. In the meantime, if using yogurt, mix it with a few drops of olive oil to make it creamier.
  7. Serve the peaches warm, 2 halves per portion, with a spoonful of yogurt on the side or on top. Spoon over a little of the sauce that has collected in the dish.
