The key is to really beat the quark with the yogurt – the mixture should be smooth and free of lumps, so I use a simple whisk or fork and spend a full 2 minutes on this. If you’re using very juicy fruit, add it at the end and mix gently so the dessert doesn’t become watery. You can add the oats in the evening and leave everything in the fridge – in the morning the mixture will be creamier and the oats soft, just like in overnight oats.
How to serve
I usually serve this quark layered in glasses or jars – quark mixture, fruit, nuts on top – it’s perfect as a quick grab-and-go breakfast for work. To drink, serve black coffee, coffee with milk, or tea with lemon, and on a hot day a glass of water with mint. It also makes a very convenient dessert after a light lunch, for example after roast chicken or a pasta salad, when there’s no room left for heavy cakes.
Ingredients
- quark semi-fat or low-fat, smooth or ground - 250 g
- plain yogurt thick - 150 g
- honey - 1.5 tablespoons
- vanilla extract or vanilla sugar - 0.5 teaspoons
- apple small - 1 piece
- banana medium - 1 piece
- grapes seedless, any color - 80 g
- rolled oats old-fashioned - 3 tablespoons
- nuts chopped, e.g. walnuts or hazelnuts - 2 tablespoons
Preparation
- In a bowl, mix the quark with the yogurt, honey, and vanilla. Beat with a spoon or whisk for about 1–2 minutes until the mixture is smooth and creamy.
- Wash the apple, remove the core, and cut into small cubes. Peel the banana and slice it. Wash the grapes and cut them in half.
- Add the oats to the quark mixture and gently stir to combine.
- Add the chopped fruit (you can reserve some for decoration) and mix very gently so as not to crush them.
- Transfer the dessert into two bowls or glasses, sprinkle with chopped nuts and the reserved fruit on top.
- You can serve it immediately or chill it in the fridge for 10–15 minutes so the oats soften slightly.
Storage
Store the quark mixture in an airtight container in the fridge and add fresh fruit like banana just before serving so it doesn’t brown or turn mushy.
