Spanish Salad with Tomatoes, Nectarines and Goat Cheese Recipe

Juicy tomatoes and sweet nectarines with pieces of creamy goat cheese make a summery salad in Spanish style. In Spain, fruit very often finds its way into savory dishes, especially in summer when it is at its ripest. This is a great way to make a quick lunch on a hot day when you don’t feel like cooking.

Ingredients

  • tomatoes ripe, meaty, e.g. beefsteak or similar - 3 pieces
  • nectarine ripe but firm - 2 pieces
  • goat cheese soft, in a log or round - 80 g
  • olive oil good quality, extra virgin - 2 tablespoons
  • balsamic vinegar or sherry vinegar - 1 tablespoon
  • honey runny - 1 teaspoon
  • fresh basil torn into pieces - 8 leaves
  • sea salt to taste
  • black pepper freshly ground, to taste

Preparation

  1. Wash the tomatoes and cut them into thick slices or wedges. If they are very juicy, you can pour off a little of the excess juice so the salad doesn’t become watery.
  2. Wash the nectarines, cut them in half, remove the stones and cut into eighths. You don’t need to peel them if the skin is thin.
  3. Cut the goat cheese into small slices or crumble it into bite-sized pieces with your fingers.
  4. On a large plate or platter, arrange the tomatoes and nectarines, tossing them lightly so the fruit and vegetables are intermingled.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar and honey until you get a smooth dressing. Season with a pinch of salt and pepper.
  6. Drizzle the salad with the dressing and gently shake or tilt the plate so the dressing spreads evenly.
  7. Scatter the pieces of goat cheese and the torn basil leaves over the top. Finally, lightly sprinkle the salad again with salt and freshly ground pepper.
  8. Serve immediately, before the tomatoes release too much juice.
