German Breakfast Salad with Oats – Bircher Muesli Recipe
Although Bircher muesli comes from Switzerland, in Germany it has become a classic hotel and home breakfast. It’s a mix of soaked oats, apple, nuts and yogurt that feels a bit like dessert, yet keeps you full for a long time. Perfect to prepare in the evening so you can just grab it from the fridge in the morning.
This German-style Bircher muesli is creamy, naturally sweet and full of texture from fresh apple, nuts and raisins. It’s quick to prepare ahead and makes busy mornings much easier while still feeling like a treat.
Chef's tips
Adjust the consistency to your liking: more milk for a looser muesli, more yogurt for a thicker, dessert-like texture. Grate the apple just before mixing it in so it stays juicy and fresh. If you prefer less sweetness, reduce the honey and rely on the fruit for natural sweetness.
How to serve
Serve in bowls or jars, topped with banana slices and extra nuts. For a brunch spread, offer additional toppings in small bowls: chopped nuts, seeds, coconut flakes or extra fruit so everyone can customize their portion.
Ingredients
- rolled oats - 80 g
- milk - 120 ml
- plain yogurt thick - 150 g
- apple with skin, well washed - 1 piece
- lemon juice - 1 tablespoon
- honey or to taste - 1.5 tablespoons
- hazelnuts coarsely chopped - 20 g
- raisins - 20 g
- banana sliced, for serving - 0.5 piece
Preparation
- Put the oats into a bowl or container, pour in the milk, stir and set aside for at least 10 minutes to soften. If you are preparing breakfast for the next morning, place it in the fridge overnight straight away.
- Add the yogurt and honey to the soaked oats and mix thoroughly until you get a thick but still slightly runny mixture. If needed, add a little more milk.
- Wash and dry the apple, then grate it on the coarse side of a grater together with the skin. Immediately drizzle with lemon juice and mix so it doesn’t turn brown.
- Add the grated apple, raisins and chopped nuts to the bowl with the oats. Gently mix.
- Serve immediately or after chilling, topped with banana slices. If you like, drizzle with a little extra honey.
Storage
Store the muesli in an airtight container or jars in the fridge for up to 2 days. Stir before serving and add fresh fruit just before eating so it stays firm.
