Korean Jelly Dessert with Drinks and Fruits Recipe
Colorful jelly cubes made from sodas and juices, served with fruit, are a popular, fun dessert among young Koreans. They’re a bit like our jelly with whipped cream, but here the base is sweet drinks that give different flavors and colors. Perfect for a summer party or as a sweet surprise for kids.
This dessert combines familiar jelly with the playful twist of using colorful sodas and juices, creating eye-catching layers that kids and adults both enjoy. It’s easy to customize with different drinks and fruits, and looks spectacular on a party table.
Chef's tips
Make sure each layer is fully set before pouring the next one, otherwise the colors will mix and the layers won’t be as distinct. If you’re in a hurry, use a shallow dish so the layers are thinner and set faster. Always dissolve the gelatin completely in hot water first, then mix it with the cooled drink to avoid lumps.
How to serve
Serve in small glass bowls or cups so the colors are visible. For a more elegant version, cut the jelly into neat cubes and arrange them with fruit on a large platter, then let everyone help themselves. A sprig of mint on top adds a fresh look and aroma.
Ingredients
- lemon soda e.g. Sprite or similar - 250 ml
- orange juice clear - 250 ml
- grape juice dark, clear - 250 ml
- powdered gelatin 8 g for each layer - 24 g
- sugar optional, if the drinks are not very sweet - 2 tablespoons
- strawberries cut into pieces - 100 g
- grapes halved, seedless - 100 g
- kiwi peeled, cut into cubes - 1 piece
- whipped cream for serving, optional - 150 ml
- water hot, for dissolving the gelatin - 75 ml
Preparation
- Prepare a rectangular or square dish, for example a glass one, with a capacity of about 1 liter. Lightly moisten it with cold water.
- Divide the gelatin into 3 equal portions of 8 g each.
- Put the first portion of gelatin (8 g) into a small bowl, pour in 25 ml of hot water and stir until completely dissolved.
- Pour the lemon soda into a bowl, optionally add 1 tablespoon of sugar if you want a sweeter dessert, and mix with the dissolved gelatin.
- Pour the liquid into the dish and place in the fridge for about 30–40 minutes, until the layer is completely set.
- Repeat the step of dissolving gelatin for the orange juice: dissolve 8 g of gelatin in 25 ml of hot water, mix with the orange juice and optionally 1 tablespoon of sugar.
- Carefully pour the orange mixture over the set lemon layer, preferably spooning it in so you don’t make a hole in the first layer. Chill again in the fridge for 30–40 minutes.
- Finally, dissolve the last 8 g of gelatin in 25 ml of hot water and mix with the grape juice.
- Pour the third layer over the set orange jelly and chill in the fridge for at least 2 hours, until the whole dessert is well set.
- Before serving, cut the jelly into cubes with a knife dipped beforehand in hot water so the cuts are clean.
- Put a mixture of fruits into serving bowls: strawberries, grapes and kiwi.
- Place the jelly cubes on top of the fruits and, if you like, add a dollop of whipped cream on top. Serve immediately while the dessert is well chilled.
