Ingredients

  • baguette or wheat rolls they can be stale - 4 piece
  • pork sausage e.g. Silesian, Podwawelska - 200 g
  • cheese well-melting, e.g. Gouda - 150 g
  • onion medium - 1 piece
  • ketchup mild or spicy - 4 tablespoons
  • mustard e.g. Sarepska - 2 tablespoons
  • oil - 1 tablespoon
  • sweet paprika - 0.5 teaspoons
  • hot paprika optional - 0.25 teaspoons
  • pickled cucumber for serving - 2 piece

Preparation

  1. Preheat the oven to 200°C (top and bottom heat). Line a baking tray with baking paper.
  2. Cut the baguette or rolls in half lengthwise. Place them cut side up on the tray.
  3. Slice the sausage into thin slices or small half‑slices. Peel the onion and slice it into thin wedges.
  4. Heat the oil in a frying pan. Add the sausage and fry for 3–4 minutes over medium heat until lightly browned. Add the onion and fry for another 3–4 minutes, until it softens and lightly browns.
  5. In a small bowl, mix the ketchup, mustard, sweet paprika and hot paprika. Spread a thin layer of the sauce over each bread half.
  6. Distribute the fried sausage and onion evenly over the sauce.
  7. Grate the cheese on a coarse grater and generously sprinkle it over each sandwich.
  8. Put the tray into the preheated oven and bake for 8–12 minutes, until the cheese melts and lightly browns and the edges of the bread are crisp.
  9. Slice the pickled cucumbers. Serve the baked sandwiches immediately, with the pickled cucumber on the side or on top.
